The delicious taste of this particular cheese comes all the way from Italy where the main ingredient is unskimmed milk from the cattle. The milk from these cows is called Gorgonzola after a village that is now known as a suburb of Milan. Many Italians use this cheese for their pizza, lasagna, and spaghetti. One of the best Italian recipes for the cheese is a cheese sauce. It is made from 2 tablespoons of flour, 2 tablespoons of butter, a cup of heavy cream, 1/2 a cup of chicken stock, ¼ cup of white wine, and 1 cup of crumbled Gorgonzola cheese.
The butter is melted at a medium heat in a pan and the flour is added once the butter has completely melted. This mixture should be on the fire for about two minutes so the raw smell of the flour will be removed. Stir in all the other ingredients except for the Gorgonzola cheese. until the entire mixture is hot and smooth. This should be accomplished in about five minutes. Now you are ready to add the cheese. For the best results serve it immediately.
Gorgonzola cheese is only made from the milk found in the areas of Lombardy and Piedmont. The milk has to be pure from disinfectants, antibiotics, and pesticides. If there are any of those items found in the milk then the quality of the cheese will be poor. There are various enzymes added to the milk during the cooking process. To get the delicious flavor for this type of cheese it hapensive though because it has to be imported. If you ever travel to Italy make sure you enjoy plenty of Gorgonzola cheese while you are there.
